Gold in SIP Awards 2019. A unique method to accelerate maturation - The theory is that maturation takes place when the whisky interacts with the oak of the barrel. So after around 5 years of being in ex-bourbon casks these then get finished in quarter casks (small casks) so more whisky is interacting with the barrel.
